French Tuna Salad aka Nicoise Salad

Vinaigrette

  • 1/2 cup extra virgin olive oil

  • 1/3 cup freshly squeezed lemon juice

  • 1 tbsp dijon mustard

  • 1 shallot, finely chopped

  • 2 tsp anchovy paste

  • 1 tbsp finely chopped capers or olives

Salad

  • 4 hard boiled eggs

  • 10 baby or fingerling potatoes

  • 1 head lettuce, torn into bite size pieces

  • green beans, trimmed

  • 8 cherry tomatoes, halved

  • 8 oz oil packed tuna loin, drained 

  • ½ small bunch radishes, sliced

  • baby red or green onions, cleaned and chopped


INSTRUCTIONS

For vinaigrette, in medium bowl, whisk together olive oil, lemon juice, mustard, shallots, anchovy paste and capers. Set aside.

For salad, fill a large bowl with ice and water; set aside. In a medium saucepan, bring water to bowl. Add green beans and cook for 5 minutes. Drain and place in prepared ice water bath. Let cool completely. Drain & pat dry.

Place eggs in medium saucepan and cover with cold water. bring to boil; cover and let sit 12 minutes. Peel and cut into wedges and set aside.

Place potatoes in same pot and cover with cold water and add salt. Bring to boil and reduce to simmer, cook until fork tender; about 8 minutes. drain and cool. Cut in half lengthwise.

Place greens on large platter. Toss potatoes, beans and tomatoes in separate bowl with ½ the dressing and arrange over lettuce. arrange tuna over salad and garnish with eggs, radishes and onions. Drizzle lightly with remaining dressing.
