Classic Dijon Dressing


Spring Salad with Classic Dijon dressing

5 cups mache lettuce, washed and torn into pieces

Coarse salt and freshly ground pepper, to taste

Dijon Dressing
½ cup olive oil

¼ cup red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon minced shallots

coarse salt and freshly ground pepper, to taste

For dressing, in small bowl combine all ingredients until well blended; set aside.

For salad, in large bowl, combine red oak leaf, carrots,radishes adn green onions. Add dressing and toss well. Season with salt and pepper. Serve immediately.
