Caramelised Onion Dip


2 tablespoons unsalted butter

1 tablespoon olive oil

1 large white onion, chopped, approx. 4 cups

1/2 cup sour cream

1/2 cup mayonnaise

2 teaspoons fresh lemon juice

sea salt and freshly ground pepper

chopped fresh dil, to garnish

kettle style potato chips, to serve


In a large skillet, melt butter and olive oil over medium high- heat. Add onions and cook 3 minutes. Reduce heat to low and cook, stirring occasionally, until onions are very soft and golden, 25 to 30 minutes. Remove from heat and coolest aside.

In small bowl, combine sour cream, mayonnaise and lemon juice. Add cooked onions and mix well. Season with salt and peppered dill. Serve with Kettle -style potato chips.

Makes 1 cup
